Trim the tough ends
Cut about 1 inch off the bottom of each stalk. If the stems are thicker than a pencil, split them lengthwise so they cook at the same rate as the florets.
Get the pan hot first
Heat 2 tablespoons of olive oil over medium-high until it shimmers, then add the broccolini in one layer and leave it alone for 2 to 3 minutes to char.
Add garlic at the end
Stir in minced garlic during the last 30 to 60 seconds. Any earlier and it burns before the stalks are tender.
Roast at high heat
Spread the bunches on a sheet pan and roast at 425°F for 12 to 15 minutes, turning once, until the tips are browned and crisp.
