Open in Pepper →Peanut butter cookies are the ones you can make without a trip to the store. Peanut butter, sugar, an egg, and twenty minutes, and the kitchen smells like somebody planned ahead.
Cooks on Pepper reach for these when the kids need something after supper, when a neighbor stops by, or when a lunchbox needs filling and there's no time for a long bake.
Every recipe here keeps the list short: chocolate covered peanut butter cookies made with almond flour and dates, plain Peanut Butter Cookies with vanilla and sugar, almond flour peanut butter cookies with maple syrup, and 3 ingredient peanut butter cookies with just peanut butter, sugar, and an egg.
Use shelf-stable peanut butter
Regular creamy peanut butter holds the dough together better than natural; if you use natural, stir it well and chill the dough 15 minutes.
Press with a fork twice
Roll dough into 1-inch balls, then press with a floured fork in both directions so they bake evenly in about 10 minutes.
Pull them looking underbaked
Take them out at 9 to 10 minutes when the edges are set and the centers still look soft; they firm up on the sheet.
Cool on the pan
Let the cookies sit 5 minutes before moving them, or flourless ones will crumble right off the spatula.
