Whole30 dinners built on ground turkey — kofta, sweet potato skillet, turkey burgers with mushrooms, spinach meatballs — for busy weeknights.
★ lunch
Leaner version of the traditional kofta which uses minced beef and/or lamb. If you want to try this with beef and/or lamb (aim for an 80/20 fat content), follow the same steps but omit the egg and added oil. And this recipe is very flexible, so feel free to add whatever combo of spices and/or fresh herbs you wish
P.S. We update the recipes on this page every few days. If you want to cook this recipe over and over again, we'd love it if you downloaded Pepper 🤝.

Open in Pepper →A pound of ground turkey is one of the easiest things to keep in the fridge. It cooks in minutes, takes on whatever seasoning you give it, and stretches into skillets, patties, and meatballs without much fuss.
Cooks on Pepper reach for this collection on the nights when the plan is to keep things simple — no bread, no dairy, just meat and vegetables in one pan and dinner on the table fast.
Every recipe here leans on that one pound. There's Ground Turkey Kofta Guys, a Sweet Potato and Ground Turkey Skillet, a turkey burger with mushrooms and Brussels, a Turkey Burger and Rosted Cauliflower, and Spinach Turkey Meatballs with carrot and onion mixed in.
Season the meat heavily
Ground turkey is mild, so use about 1 teaspoon of salt per pound plus plenty of pepper, garlic, and onion before it ever hits the pan.
Add fat to the pan
With 99% lean turkey, start with 1 to 2 tablespoons of olive oil or ghee so the meat browns instead of sticking and drying out.
Cook sweet potatoes first
Give diced sweet potato a 7 to 10 minute head start in the skillet, then push it aside and brown the turkey in the same pan.
Chill patties before grilling
Shape burgers or kofta, then rest them in the fridge 15 to 20 minutes so they hold together and don't crumble on the grates.
