Every recipe here is either the sauce or the pizza it goes on: creamy Alfredo sauce, garlic Parmesan white sauce, bechamel sauce, garlic cream sauce, plus Greek white pizza, chicken Alfredo pizza with dipping sauce and homemade shrimp scampi white pizza.
Cook the flour first
For bechamel or garlic Parmesan sauce, whisk the butter and flour together 1 to 2 minutes before adding liquid so it does not taste pasty.
Add milk warm
Pour in milk or cream a little at a time, whisking, and keep it just under a simmer so the sauce thickens smooth instead of scorching on the bottom.
Go easy on sauce
Spread only about 1/2 cup of white sauce on a 12-inch crust; more than that and the middle steams instead of crisping.
Grate your own cheese
Bagged shredded cheese has starch that can make white sauce grainy, so grate 2 cups off the block and stir it in off the heat.
