Why Great Waffles Are All About the Batter

The difference between a soggy waffle and a shatteringly crisp one is in the batter. Cornstarch, separated eggs, and a slightly thicker mix make all the difference.

Let your iron preheat fully — most home cooks pour too early. A hot iron sets the exterior fast for that perfect crunchy shell.

Don't stack hot waffles. They steam each other into soft. A 200°F oven on a wire rack keeps them crispy until everyone's served.

Quick Tips

  1. 1

    Add cornstarch

Replacing a few tablespoons of flour with cornstarch is the secret to a shattering crisp exterior, even hours later.

  2. 2

    Whip the egg whites

Folding in stiff egg whites gives you that classic light, airy interior. Skip and you'll get a denser, breadier waffle.

  3. 3

    Preheat fully

Most waffle irons signal ready before they really are. Wait another 2-3 minutes past the indicator for proper crisp.

  4. 4

    Hold on a wire rack

Stacked waffles steam each other soft. Spread them on a rack in a 200°F oven until you're ready to serve.
