Salt the pasta water
Add about 1 tablespoon of salt per 4 quarts of water. It's the only chance the noodles get to season themselves.
Save a cup of water
Scoop out 1 cup of starchy pasta water before draining and add it a splash at a time to loosen the sauce.
Cook vegetables by hardness
Start onions, peppers, and mushrooms first for 5 to 6 minutes, then add zucchini or spinach in the last 2 minutes so nothing turns to mush.
Pull pasta a minute early
Drain 1 minute before the box says, then finish it in the pan with the sauce so it soaks up flavor.
