Sweet Butter Worth Making At Home

A bowl of soft butter whipped with honey and cinnamon turns plain rolls into the thing everybody reaches for first. It takes three ingredients and about five minutes, and it makes a weeknight dinner feel like you tried harder than you did.

Cooks on Pepper pull this one up when the rolls are already rising, when company is coming, or when the kids ask for that butter from the steakhouse and nobody wants to drive there.

Every recipe here is either the butter or something to put it on: Copycat Texas Roadhouse Butter, Cinnamon Honey Butter, Copycat Texas Roadhouse Rolls, and Sourdough Texas Roadhouse Dinner Rolls with Cinnamon Honey Butter.

Quick Tips

  1. 1

    Soften the butter first

Leave the butter on the counter 30 to 45 minutes until it dents easily with your finger. Cold butter won't whip smooth, and melted butter turns runny.

  2. 2

    Whip it a full minute

Beat the butter, powdered sugar, honey and cinnamon on medium for 1 to 2 minutes until it's pale and fluffy, scraping the bowl once.

  3. 3

    Check your milk temperature

For the rolls, warm the milk to about 110°F. Much hotter and it kills the yeast; much cooler and the dough drags its feet rising.

  4. 4

    Serve butter at room temp

Pull it out of the fridge 20 to 30 minutes ahead so it spreads instead of tearing the roll apart.
