Soften the butter first
Leave the butter on the counter 30 to 45 minutes until it dents easily with your finger. Cold butter won't whip smooth, and melted butter turns runny.
Whip it a full minute
Beat the butter, powdered sugar, honey and cinnamon on medium for 1 to 2 minutes until it's pale and fluffy, scraping the bowl once.
Check your milk temperature
For the rolls, warm the milk to about 110°F. Much hotter and it kills the yeast; much cooler and the dough drags its feet rising.
Serve butter at room temp
Pull it out of the fridge 20 to 30 minutes ahead so it spreads instead of tearing the roll apart.
