Drain the beef well
Pour off the grease from a pound of ground beef before adding seasoning, or the bottom layer turns soupy under the cheese.
Add the chips last
Stir Fritos or Doritos in right before serving, or scatter them on top for the final 5 minutes so they stay crunchy.
Cover then uncover
Bake covered with foil for 20 minutes, then pull the foil and give it 10 more so the cheese browns instead of steaming.
Let it rest
Give the pan 5 to 10 minutes out of the oven before you cut it so the layers hold together on the plate.
