Preheat the skillet
Put the greased cast iron in the oven while it heats to 425°F, then pour the batter into the hot pan for a crisp brown crust.
Don't overmix the batter
Stir just until the cornmeal is wet, about 15 seconds. Lumps are fine; overworked batter bakes up tough.
Butter the top hot
Brush the crust with a tablespoon of butter the minute it leaves the oven so it soaks in while the bread is steaming.
Rest before cutting
Give it 10 minutes in the pan so the center sets and the squares come out clean instead of crumbling.
