Why Spaghetti Is Still the Weeknight King

A pound of spaghetti feeds six people for under ten dollars — no other dinner scales that well on that little effort.

Cooks on Pepper save a mug of pasta water before draining — the starchy liquid emulsifies any sauce and turns it silky instead of gluey.

The recipes here are the community's most-repeated spaghetti nights — the ones that get requested by name and always leave leftovers for tomorrow's lunch.

Quick Tips

  1. 1

    Salt the pasta water

A tablespoon per pot minimum — the noodles will never be seasoned again.

  2. 2

    Save the pasta water

Reserve a mug before draining — starchy liquid emulsifies any sauce into something silky.

  3. 3

    Undercook by two minutes

Finish the pasta in the sauce for the last two minutes — that's how the noodle actually absorbs flavor.

  4. 4

    Cheese off the heat

Parm melts smooth off the burner — added to a bubbling pan, it seizes into rubber clumps.
