Chicken Breasts That Cook While You Work

A pack of boneless skinless chicken breasts is the thing most of us have in the fridge, and the slow cooker is the only way it turns tender without anybody standing over it. Morning you does five minutes of work, and evening you walks into a house that already smells like supper.

Cooks on Pepper reach for this collection on the long days — practice, late shifts, homework at the table — when dinner has to be done the second everybody's home and hungry.

Every recipe here starts with chicken breast and ends with a full plate: Crock Pot Chicken and Gravy over mashed potatoes, Crock Pot Chicken Tortilla Soup, Crockpot Chicken Tacos, Crock Pot Chicken and Dumplings, Crockpot Chicken & Taters, and Crockpot Chicken Corn Chowder.

Quick Tips

  1. 1

    Cook on low

Chicken breast dries out fast on high — 4 to 5 hours on low keeps it juicy enough to shred with two forks.

  2. 2

    Shred right in the pot

Pull the breasts out at the end, shred them, and stir them back into the liquid for 10 minutes so they soak the sauce back up.

  3. 3

    Add dairy at the end

Stir in cream cheese, milk, or gnocchi during the last 20 to 30 minutes so nothing curdles or turns to mush.

  4. 4

    Skip the extra liquid

Chicken releases a lot of its own juice, so 1 cup of broth is plenty unless you're making soup.
