Slice against the grain
Find the direction the muscle fibers run and cut across them at an angle, in strips about 1/4 inch thick. Cut with the grain and even a good steak chews tough.
Marinate at least an hour
Lime juice, Worcestershire, and garlic do their work in 60 minutes; 4 to 8 hours is better. Don't push citrus marinades past 12 hours or the meat turns mushy.
Get the pan screaming hot
Heat cast iron or a griddle 5 minutes until it just smokes, then cook 2 to 3 minutes per side. Skirt is thin, so a hot fast sear beats a slow one.
Rest before you cut
Let the steak sit on a board 5 to 10 minutes after it comes off the heat so the juices stay in the meat instead of on your cutting board.
