Ingredients

  • 1 lb Peeled and deveined shrimp with tails removed
  • Seasoning salt
  • Avocado oil
  • 2 tbsp Butter
  • 2 cloves Minced garlic
  • 2 cups Heavy cream
  • 2 cups Parmesan cheese
  • Parsley
  • Black pepper

Instructions

  1. 1Skewer your shrimp on metal or bamboo skewers evenly between four skewers and lightly drizzle with avocado oil
  2. 2Season shrimp liberally with the seasoning salt of your choice and set aside.
  3. 3In a pan melt two tablespoons of butter and add your two cloves of minced garlic over medium heat
  4. 4When the garlic becomes fragrant add your two cups of heavy cream
  5. 5When the cream begins to bubble reduce the heat to medium low and add your cheese
  6. 6Stir until cheese is completely incorporated
  7. 7Season with Black pepper and parsley to taste
  8. 8Take your shrimp to your grill and cook for two minutes per side
  9. 9Serve your sauce over cooked fettuccini pasta and top with your grilled shrimp.

    Pat the shrimp dry

    Blot thawed shrimp with paper towels before they hit the pan so they sear instead of steam. Wet shrimp turn out rubbery and gray.

    Cook shrimp two minutes

    Give them 1 to 2 minutes per side over medium-high heat and pull them the second they curl into a C. Shrimp cooked to an O shape are overdone.

    Save a cup of pasta water

    Scoop out 1 cup of starchy water before draining and splash it in if the sauce tightens up. It loosens cream sauce without thinning the flavor.

    Add cheese off the heat

    Take the pan off the burner before stirring in grated Parmesan so it melts smooth. Boiling cream sauce makes cheese clump and turn grainy.
