Shrimp Dip Is Always The First Bowl Empty

A good shrimp dip does a lot of work for very little effort. You cook a pound of shrimp, chop it, stir it into cream cheese, and suddenly you have something people stand around and eat straight from the bowl.

Cooks on Pepper reach for these when folks are coming over on short notice, when the game is on, or when they need to bring something to a potluck that travels well and doesn't need reheating.

Every recipe here is a shrimp dip worth making twice: Million Dollar Shrimp & Crab Dip with lump crab folded in, Shrimp Dip & Homemade Dipping Croutons with fresh garlic and lemon, Hot Cheesy Shrimp Dip with Garlic Toast topped with whole shrimp, and a plain, cold Shrimp Dip with sour cream and lemon juice.

Quick Tips

  1. 1

    Don't overcook the shrimp

Simmer peeled shrimp 2 to 3 minutes, just until they curl and turn pink, then drain and cool. Rubbery shrimp only get worse sitting in the dip.

  2. 2

    Soften the cream cheese

Let 8 ounces of cream cheese sit out 30 to 45 minutes before mixing so it stirs smooth instead of leaving lumps.

  3. 3

    Chop shrimp small

Cut shrimp into pieces about 1/4 inch so the dip scoops easily and doesn't drag a whole shrimp off the cracker.

  4. 4

    Chill cold dips ahead

Give a cold shrimp dip at least 2 hours in the fridge so the lemon juice and garlic have time to come through.
