Mix the meat gently
Stir the beef, egg, and crumbs just until combined, about 30 seconds. Overworking it makes the patties tight and rubbery.
Brown the patties first
Sear 3 to 4 minutes per side in a hot skillet before the gravy goes in. Those browned bits are what makes the gravy taste like something.
Scrape the pan
After browning, add your onions and a splash of broth and scrape the bottom for a full minute so nothing stuck stays stuck.
Simmer in the gravy
Return the patties to the pan, cover, and let them simmer 15 to 20 minutes on low so they soak up the flavor and finish cooking through.
