A Hot Pan Of Potatoes Fixes Dinner

A sheet pan of potatoes and carrots turns whatever meat you have into a real supper. Crispy edges, soft middles, and nobody at the table asks what else there is.

Cooks on Pepper reach for this collection on the nights the main dish is already handled — a chicken in the oven, pork chops in the skillet — and the side has to cook itself with almost no fuss.

Every recipe here is potatoes or carrots done simple: Parm roasted potatoes and Broccoli, Garlic roasted carrots, Crispy Oven Roasted Potatoes, French Onion Roasted Potatoes, Air Fryer Roasted Potatoes, and Roasted potatoes and carrots when you want both on one pan.

Quick Tips

  1. 1

    Cut them the same size

Aim for 1-inch pieces so nothing burns while the rest is still raw. Halve baby potatoes, quarter big Yukon golds.

  2. 2

    Preheat the pan

Slide the empty sheet pan into a 425°F oven for 5 minutes, then add the potatoes cut side down for a hard sear.

  3. 3

    Add carrots later

Carrots cook faster than potatoes, so give the potatoes a 15-minute head start before the carrots go on the pan.

  4. 4

Hold the cheese till the end

Stir in parmesan or ranch powder during the last 5 to 8 minutes so it browns instead of scorching.
