Cut them the same size
Aim for 1-inch pieces so nothing burns while the rest is still raw. Halve baby potatoes, quarter big Yukon golds.
Preheat the pan
Slide the empty sheet pan into a 425°F oven for 5 minutes, then add the potatoes cut side down for a hard sear.
Add carrots later
Carrots cook faster than potatoes, so give the potatoes a 15-minute head start before the carrots go on the pan.
Hold the cheese till the end
Stir in parmesan or ranch powder during the last 5 to 8 minutes so it browns instead of scorching.
