Pull the membrane off
Slide a butter knife under the thin silverskin on the bone side and pull it off with a paper towel. It takes 30 seconds and keeps the rub from sitting on rubber.
Cook low and slow
Hold the grill around 250°F with the ribs off direct heat. Baby backs run about 3 hours, spare ribs and beef ribs closer to 5.
Sauce at the end
Brush on barbecue sauce or honey glaze in the last 20 to 30 minutes. Any earlier and the sugar burns before the meat is done.
Rest before slicing
Tent the rack in foil for 10 to 15 minutes off the heat, then cut between the bones so the juices stay in the meat.
