Ingredients

  • Ribeye steak
  • Baked potato
  • Broccoli
  • Scallions
  • Butter
  • Rosemary
  • Salt
  • Pepper

Instructions

  1. 1Leave steak out for 30min to meet room temperature then season
  2. 2Sear steak with garlic and Rosemary. Season with salt, pepper, and Montreal steak
  3. 3Place the cast iron in the oven and bake for 5 minutes
  4. 4Take out of the oven and sear on both sides for several more minutes. Make sure to base with butter
  5. 5Enjoy

A Good Ribeye Doesn't Need Much

    Salt it early

    Season both sides with salt at least 40 minutes ahead, or the night before in the fridge, so it soaks in instead of sitting on top.

    Take the chill off

    Let the steak sit out 30 to 45 minutes before it hits the pan so the middle cooks evenly.

    Get the pan smoking

    Heat cast iron over high for 5 minutes with a little neutral oil, then don't touch the steak for the first 3 minutes.

    Rest before slicing

    Move it to a board and wait 8 to 10 minutes, then cut against the grain so the juice stays in the meat.
