Salt it early
Season both sides with salt at least 40 minutes ahead, or the night before in the fridge, so it soaks in instead of sitting on top.
Take the chill off
Let the steak sit out 30 to 45 minutes before it hits the pan so the middle cooks evenly.
Get the pan smoking
Heat cast iron over high for 5 minutes with a little neutral oil, then don't touch the steak for the first 3 minutes.
Rest before slicing
Move it to a board and wait 8 to 10 minutes, then cut against the grain so the juice stays in the meat.
