Ingredients

  • 1 Lb Chicken Thighs (Boneless/Skinless)
  • 1/2 cup Potato Starch
  • 2 inches Vegetable Oil
  • 2 tbsp Soy Sauce
  • 3 tbsp Mirin
  • 2 tbsp Brown Sugar
  • 1 tbsp Cider Vinegar
  • 2 tbsp Honey
  • 2 cloves Garlic Cloves (grated)
  • 1 tsp Fresh Ginger (grated)
  • 2 tsp Sesame Oil
  • 1 tbsp Gochujang
  • Green Onion
  • Sesame Seeds
  • Salt & Pepper
  • Garlic Powder

Instructions

  1. 1Cut the chicken into pieces and remove any excess fat. Season with salt, pepper, garlic powder, and mix well. Set aside
  2. 2Add 1/2 cup potato starch to a bowl and coat the chicken. Set aside
  3. 3Preheat oil in a pan and fry chicken in batches for 3–4 minutes per side. Remove from oil to a wire rack
  4. 4Second fry: once all the chicken pieces are fried. In small batches, double-fry the chicken again until gold brown. Place on a wire rack
  5. 5In another pan all the remaining ingredients (except green onions and sesame seeds) in a sauté pan
  6. 6Bring ingredients to a bubble over medium heat. Once bubbling place the chicken back into the pan and make sure everything is coated well. Remove from heat and garnish with green onions and sesame seeds
  7. 7Enjoy! ❤️✌️

Why Chicken Never Really Leaves the Weekly Rotation

Chicken breast, chicken thighs, ground chicken, rotisserie — no other protein pulls this much weight in a home kitchen.

Cooks on Pepper hit it from every angle: marinated grills, creamy skillets, sheet-pan bakes, meal-prep bowls, and the occasional casserole.

The recipes here are the ones with the most saves for a reason — they solve dinner Monday through Thursday.

Quick Tips

  1. 1

    Brine the breast

30 minutes in a saltwater bath is the fix for chicken breast that always dries out.

  2. 2

    Thighs forgive you

Bone-in, skin-on chicken thighs stay juicy at 165°F, 175°F, or even 185°F — great for beginners.

  3. 3

    Rest before slicing

Cutting a chicken breast right off the pan loses half the juice to the cutting board.

  4. 4

Sheet pan is a weeknight cheat

Toss chicken and vegetables with olive oil, roast at 425°F, done in 25 minutes.
