Salt the water well
Chickpea and lentil pastas taste flat without it — use about 1 tablespoon of salt per 4 quarts of water.
Undercook by two minutes
Protein pastas go mushy fast, so pull them 2 minutes shy of the box time and taste before draining.
Save a cup of water
Scoop out 1 cup of starchy cooking water before draining and add it a splash at a time to loosen creamy sauces.
Rinse for cold salads
For the BLT or grinder salads, rinse the drained pasta under cold water for 30 seconds so it stops cooking and doesn't clump.
