Sear it first
Brown the loin in a hot skillet with butter for 2 to 3 minutes per side before it goes in the crock pot. It gives the gravy a deeper color and flavor.
Put onions on the bottom
Lay a sliced large onion in the crock pot and set the pork on top. It keeps the meat off the hot bottom and flavors the liquid at the same time.
Know your finish
Cook on low about 4 hours if you want neat slices, or closer to 7 to 8 hours if you want it falling apart for sandwiches.
Thicken the juices
Whisk 1 tablespoon cornstarch with 2 tablespoons cold water, stir it into the hot cooking liquid, and let it bubble 5 minutes for gravy.
