Slice against the grain
Cut sirloin or flank steak into thin strips across the muscle fibers, about 1/4 inch thick, so every bite stays tender.
Freeze the steak briefly
Pop the beef in the freezer for 20 to 30 minutes before slicing — firm meat cuts much thinner and more evenly.
Get the pan hot
Heat the oil until it shimmers and cook the beef in two batches, 2 to 3 minutes each, so it sears instead of steaming.
Add peppers last
Stir in bell peppers and onions for just 3 to 4 minutes at the end so they stay crisp and bright, not limp.
