Steak And Peppers In One Skillet

Sliced beef, sweet peppers, onions, and a glossy brown sauce over rice — it's the kind of dinner that looks like you fussed when it really took twenty minutes and one pan.

Cooks on Pepper reach for this collection on the nights they want something hot and savory without a long grocery list, or when there's a sirloin in the fridge and peppers going soft in the drawer.

Every recipe here is a real version of the same good dinner: the classic Pepper Steak, Chinese Pepper Steak with Onions, a Slow Cooker Pepper Steak for busy days, an Instant Pot Pepper Steak, and Pepper Steak Stir Fry Meal Prep for lunches all week.

Quick Tips

  1. 1

    Slice against the grain

Cut sirloin or flank steak into thin strips across the muscle fibers, about 1/4 inch thick, so every bite stays tender.

  2. 2

    Freeze the steak briefly

Pop the beef in the freezer for 20 to 30 minutes before slicing — firm meat cuts much thinner and more evenly.

  3. 3

    Get the pan hot

Heat the oil until it shimmers and cook the beef in two batches, 2 to 3 minutes each, so it sears instead of steaming.

  4. 4

    Add peppers last

Stir in bell peppers and onions for just 3 to 4 minutes at the end so they stay crisp and bright, not limp.
