Paleo dinners built on ground turkey — kofta, sweet potato skillet, turkey burgers with Brussels, spaghetti squash and meatballs — for busy weeknights.
★ lunch
Leaner version of the traditional kofta which uses minced beef and/or lamb. If you want to try this with beef and/or lamb (aim for an 80/20 fat content), follow the same steps but omit the egg and added oil. And this recipe is very flexible, so feel free to add whatever combo of spices and/or fresh herbs you wish
P.S. We update the recipes on this page every few days. If you want to cook this recipe over and over again, we'd love it if you downloaded Pepper 🤝.

Open in Pepper →A pound of ground turkey thaws fast, browns in about 8 minutes, and takes on whatever seasoning you hand it. That makes it the easiest thing to build a grain-free dinner around when you walk in the door at six.
Cooks on Pepper reach for this collection on the nights they want real food without a long ingredient list — one skillet, a vegetable, and dinner on plates before anybody starts asking.
Every recipe here keeps it simple: Ground Turkey Kofta Guys, Sweet Potato and Ground Turkey Skillet, Anti-Inflammatory Turkey & Sweet Potato Bowls, turkey burgers with mushrooms and Brussels, Spaghetti Squash and Turkey Meatballs, and Spinach Turkey Meatballs.
Season before you brown
Mix salt and pepper into the raw turkey rather than sprinkling the cooked pan. A teaspoon of salt per pound seasons it all the way through.
Let the pan get hot
Heat a tablespoon of olive oil over medium-high for 2 minutes before the turkey goes in, so it browns instead of steaming.
Dice sweet potatoes small
Cut them into 1/2-inch cubes and they'll be tender in 12 to 15 minutes, right about when the turkey is done.
Chill meatballs before cooking
Rest shaped kofta or spinach turkey meatballs in the fridge 15 minutes so they hold together and don't fall apart in the pan.
