Pulled pork and sweet potato mash

Lunch meal prep for a quick and easy microwave meal at work. High protein, calroie counted. Serves 4. Macros: 420 calories, 29g protein, 40g carb, 15g fat. Slow cooker crock pot recipe

Ingredients

  • 500g Pork shoulder
  • 1 tbsp BBQ seasoning
  • 100g BBQ sauce
  • 1/2 can Coca cola
  • 2 tbsp Tomato puree
  • 75ml Water
  • 550g Sweet potato
  • 20g Butter
  • 20ml Semi skimmed milk
  • 150g Green beans
  • To taste Salt/pepper

Instructions

  1. 1Season the pork shoulder with BBQ seasoning and place in crock pot. Add water, BBQ sauce, tomato puree and 1/2 can of coca cola.
  2. 2Cook in crock pot on high for 4 hours or low for 8 hours.
  3. 3Peel and dice the sweet potato and place in a large pan with water.
  4. 4Trim the green beans and slice into halves. Boil ok the stove for 5-7 minutes until tender.
  5. 5Boil for 15 minutes until soft and drain. Mash with butter, milk, salt and pepper.
  6. 6Once the pork has cooked, remove from the pot and shred with two forks. Add back in and combine with the sauce. Remove lid if required to allow to sauce to thicken.
  7. 7Serve 1/4 of the mash, pulled pork and green beans per portion.
