Spread chips in a single layer. Cheese first, then heavier toppings, then bake. Cold toppings (sour cream, salsa, guac) go on after the pull from the oven.
Use a real cheese — Monterey Jack, cheddar, or a Mexican blend grated fresh. Pre-shredded contains anti-caking starch that fights against melting.
