★ appetizer
Worked in a winery near Virginia tech and I find that universities have an endless demand for group activities and beer! which brings us another dip thats always made during football season for those who like beer or those who love to watch their cheese stretch a mile away…

Open in Pepper →A pot of melted cheese turns a bag of chips into dinner, and most of these come together in one pan while everybody hovers around the stove.
Cooks on Pepper reach for these on game days, on the nights nobody wants a real meal, and any time there's a can of Rotel and a block of cream cheese in the house.
Every recipe here is built on cheese and a few pantry things — beer cheese dip with cream cheese and cheddar, lazy chicken nachos, Mexican restaurant style white queso, sausage and cheese dip, cast iron venison nachos, and a Taco Bell nacho cheese sauce copycat.
Shred your own cheese
Bagged shreds are coated with starch that makes sauce grainy. Grate an 8-ounce block yourself and it melts smooth in about 5 minutes.
Keep the heat low
Melt cheese over low heat, stirring often, and pull it off before it bubbles hard so it doesn't break or turn oily.
Add liquid slowly
Pour in milk, evaporated milk, or beer a few tablespoons at a time until the dip pours off the spoon in a thick ribbon.
Drain the meat well
After browning a pound of sausage, venison, or beef, drain off the grease so the finished dip doesn't separate.
