Brown the mushrooms hard
Spread sliced mushrooms in a hot, barely crowded pan and leave them alone 4 to 5 minutes before stirring. Crowding steams them and you lose the deep flavor.
Salt the mushrooms last
Wait until they're browned to season, about 6 minutes in, since salt pulls out water and keeps them pale and rubbery.
Save a cup of pasta water
Scoop out 1 cup before draining and splash it in a few tablespoons at a time to loosen a cream sauce that has tightened up.
Add cream off the heat
Pull the pan off the burner before stirring in heavy cream or Boursin, then warm it back gently for 2 minutes so it stays smooth.
