Ingredients

  • 1 lb ground beef
  • 1, thinly sliced large onion
  • 3, minced garlic cloves
  • 2 cups sliced mushrooms
  • 12 oz shell pasta
  • 2 cups beef broth
  • 2 tablespoons Worcestershire sauce
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 1 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • to taste salt
  • for garnish fresh parsley
  • a pinch (optional) red pepper flakes

Instructions

  1. 1Cook the pasta according to package directions until just al dente. Drain and set aside.
  2. 2Heat olive oil in a large skillet over medium-high heat. Add the ground beef, breaking it apart as it browns. Season with salt, pepper, and onion powder. Cook until deeply browned and crispy in spots, about 6–7 minutes. Remove and set aside.
  3. 3In the same skillet, add butter. Toss in the sliced onions and cook low and slow until they're golden and sweet, about 8–10 minutes. Stir occasionally so they caramelize but don't burn.
  4. 4Add the mushrooms and garlic. Cook until the mushrooms release their moisture and turn golden at the edges, about 5 minutes.
  5. 5Return the beef to the skillet. Pour in the beef broth and Worcestershire sauce. Let it simmer and reduce slightly until it thickens into a glossy, savory sauce, about 4–5 minutes.
  6. 6Toss the cooked pasta into the skillet. Stir everything together until every shell is coated in that rich, buttery sauce.
  7. 7Garnish with fresh parsley and a tiny sprinkle of red pepper flakes if you like a little kick.
  8. 8Serve it up while it's hot.

Mushrooms Make A Pasta Dinner Feel Bigger

A pound of mushrooms and a box of pasta stretch into a full pan of dinner, and they soak up butter, garlic and cream better than almost anything else in the produce drawer. Add a little beef, chicken or sausage and you've fed everybody without a trip to the store.

Cooks on Pepper reach for this collection on the nights when the meat in the fridge is a single chicken breast or half a pound of ground beef, and dinner still has to land on the table by six.

Every recipe here leans on that same skillet of browned mushrooms: Creamy Beef and Mushroom Pasta, Chicken & Mushroom Pasta in Decadent Cream Sauce, One Pot Spinach Mushroom Pasta, Boursin Beef & Mushroom Pasta, and Crispy Pancetta & Mushroom Pasta when you want something salty on top.

Quick Tips

  1. 1

    Brown the mushrooms hard

Spread sliced mushrooms in a hot, barely crowded pan and leave them alone 4 to 5 minutes before stirring. Crowding steams them and you lose the deep flavor.

  2. 2

    Salt the mushrooms last

Wait until they're browned to season, about 6 minutes in, since salt pulls out water and keeps them pale and rubbery.

  3. 3

Save a cup of pasta water

Scoop out 1 cup before draining and splash it in a few tablespoons at a time to loosen a cream sauce that has tightened up.

  4. 4

    Add cream off the heat

Pull the pan off the burner before stirring in heavy cream or Boursin, then warm it back gently for 2 minutes so it stays smooth.
