Brown and drain the meat
Cook 1 pound of ground beef or sausage until no pink remains, then drain the grease so your dip doesn't separate into an oily layer.
Shred your own cheese
Grate a block of pepper jack or Colby-Jack yourself; pre-shredded cheese is coated in starch and turns grainy when it melts.
Melt cheese on low
Keep the heat low and stir in ⅔ cup milk or half-and-half a splash at a time, about 5 to 8 minutes, until the white cheese is smooth.
Chill layered dips first
Spread refried beans and softened cream cheese over the bottom, then chill 30 minutes before adding tomatoes and lettuce so the layers stay put.
