Ingredients

  • 1 1/2 cup Long Grain White Rice
  • 1 tbsp Olive Oil
  • 1 Yellow onion
  • 3 Tomatoes
  • 4 Garlic cloves
  • 1 tbsp Tomato Bouillon
  • 2 cup Chicken broth
  • 1 Jalepeno
  • 1 Lime Juice of Lime

Instructions

  1. 1In a large pan, add oil and rice over medium heat. Toast for 4-6 minutes until golden and fragrant.
  2. 2To a blender add: Onion, Tomatoes, Garlic, Tomato Bouillon, and broth. Blend until smooth.
  3. 3I prefer to strain my liquid in a fine mesh strainer, although it isn’t necessary. Measure out 3 cups of (strained) liquid and add it to toasted rice. Optional: add juice of lime and whole Jalepeno (with a couple fork holes poked).
  4. 4Stir and allow to come to a boil. Once boiling, lower heat and cover rice. Cook for 20 minutes.
  5. 5Once 20 minutes is up. Keep rice covered. And remove from heat for 10 minutes.
  6. 6Fluff rice with a fork and stir to combine.
  7. 7Enjoy!
