Brown the meat first
Get the skillet hot and spread the turkey out, then leave it alone 3 to 4 minutes before breaking it up so it gets real color instead of steaming.
Season heavier than beef
Turkey is mild, so use about 1 1/2 times the garlic, soy sauce, or chili powder you would use with beef.
Start the rice early
Brown rice needs 40 to 45 minutes, white about 18 — get it on the stove before you touch the turkey.
Cook vegetables separately
Zucchini, sweet potato, and peppers need 6 to 10 minutes on their own; add the turkey back at the end so nothing turns to mush.
