Toast the bread twice
Run the slice through a second time on a lower setting so it stays crisp under wet toppings like avocado or a poached egg for a good 10 minutes.
Add vinegar to poaching water
Stir 1 tablespoon of white vinegar into simmering water and cook the egg 3 minutes for a set white and runny yolk.
Simmer shakshuka uncovered
Let the tomatoes and peppers cook down 10 to 15 minutes before you crack in the eggs, then cover for 5 minutes to just set the whites.
Grease the muffin tin well
Brush every cup with olive oil, fill two-thirds full, and bake around 350°F for 20 minutes so the egg muffins lift right out.
