Why Thighs Beat Breasts for Mediterranean Cooking

Bone-in, skin-on thighs shrug off the long cook times a Greek or Turkish stew asks for — the meat stays juicy while lemon, garlic, and tomato reduce down into something concentrated.

Cooks on Pepper marinate in Greek yogurt, olive oil, and lemon for at least a few hours — the acid tenderizes and the yogurt makes the char stick to the grill.

The recipes here are the community's Mediterranean-thigh rotation: sheet-pan lemon-oregano bakes, artichoke-and-olive braises, and yogurt-marinated grills that hold up to a big Greek salad on the side.

Quick Tips

  1. 1

    Bone-in, skin-on

The bone conducts heat evenly and the skin renders into the pan — every plate ends with crisp edges and juicy meat.

  2. 2

    Yogurt is the secret

Full-fat Greek yogurt in the marinade tenderizes better than lemon alone and holds char beautifully.

  3. 3

    Finish with feta

Crumble at the table — cold, sharp feta on hot chicken is a different animal than baked feta.

  4. 4

    Fresh oregano matters

Dried oregano is fine for the marinade — fresh oregano at the finish is what makes it taste Greek.
