Shred your own cheese
Bagged shreds are coated to keep from clumping, which makes a grainy sauce. Grate a block of extra sharp cheddar or Colby-Jack yourself, about 2 cups per pound of pasta.
Undercook the noodles
Boil elbows 2 minutes short of the box time if they're going in the oven. They soak up sauce while baking instead of turning mushy.
Cook the flour first
Whisk equal parts butter and flour over medium heat for a full 1 to 2 minutes before adding milk, so the sauce doesn't taste pasty.
Add cheese off heat
Pull the pot off the burner before stirring in cheese, a handful at a time. Boiling cheese sauce breaks and turns oily.
