Tini’s Mac and cheese

I made @TinekeYounger Mac and cheese recipe and it was a hit!! I’ve never made Mac and cheese before but this was so easy and so delicious! Will definitely make it again.

Ingredients

  • 1 lb Elbow pasta
  • 1 lb Mozzarella
  • 1 lb. Colby-Jack
  • 1/2 lb. Sharp cheddar
  • 3 tbsp Butter
  • 3 tbsp Flour
  • 12 fl oz Evaporated milk
  • 1 tbsp Dijon Mustard
  • salt
  • Black Pepper
  • Garlic powder
  • Smoked paprika
  • 2 cup Heavy whipping cream

Instructions

  1. 1- [ ] Boil noodles and grate cheese. Divide cheese in half and put into separate bowls.
  2. 2- [ ] Make a roux. Melt butter in pan, once melted add half of seasoning mix and flour.
  3. 3- [ ] Once all the flour is cooked out add evaporated milk and whisk immediately so flour doesn’t clump.
  4. 4- [ ] Add 2 cups of heavy whipping cream and whisk and then add in the rest of the seasonings.
  5. 5- [ ] Preheat oven to 350.
  6. 6- [ ] Add Dijon mustard. Let sauce thicken before adding cheese.
  7. 7- [ ] Add in cheese a cup at a time, letting the cheese melt before adding more.
  8. 8- [ ] Mix in boiled noodles. Once well incorporated you’re gonna layer a baking dish with the noodles and cheese sauce and then shredded cheese and repeat that until noodles are gone. Save some cheese for the top!
  9. 9- [ ] Bake for 25-30 minutes or until cheese on top is melted. You can broil it for 2-5 minutes if you want a nice crust.

    Shred your own cheese

    Bagged shreds are coated to keep from clumping, which makes a grainy sauce. Grate a block of extra sharp cheddar or Colby-Jack yourself, about 2 cups per pound of pasta.

    Undercook the noodles

    Boil elbows 2 minutes short of the box time if they're going in the oven. They soak up sauce while baking instead of turning mushy.

    Cook the flour first

    Whisk equal parts butter and flour over medium heat for a full 1 to 2 minutes before adding milk, so the sauce doesn't taste pasty.

    Add cheese off heat

    Pull the pot off the burner before stirring in cheese, a handful at a time. Boiling cheese sauce breaks and turns oily.
