Sweet Endings That Keep Things Light

Some nights you want something sweet after supper without a pan of brownies sitting on the counter for three days. Fruit, yogurt, and a box of angel food cake mix will get you there in a few minutes.

Cooks on Pepper reach for this collection on warm evenings, after a heavy dinner, or when the kids want a treat and there's nothing in the house but frozen berries and a tub of yogurt.

Every recipe here is short and simple: 2-Ingredient Pineapple Angel Food Cake, Mixed Berry Frozen Yogurt Bark, Easy Frozen Yogurt Bars, Basic Banana Nice Cream, Simple Baked Apple Slices, and a strawberry sauce to spoon over a slice of cake.

Quick Tips

  1. 1

    Skip the greased pan

Angel food batter needs to climb the sides of an ungreased tube pan. Grease keeps it from rising and you'll lose an inch of height.

  2. 2

    Freeze bark on parchment

Spread the yogurt about 1/4 inch thick on a parchment-lined sheet pan and freeze 3 to 4 hours, then break it into pieces.

  3. 3

    Freeze bananas in coins

Slice bananas into 1/2-inch pieces before freezing so they blend smooth in 2 to 3 minutes instead of straining your blender.

  4. 4

    Cook the berry sauce down

Simmer strawberries and sugar 10 to 15 minutes until the juice thickens enough to coat a spoon, then cool before serving.
