Open in Pepper →A slow cooker earns its keep on the days you leave the house before eight and walk back in starving. Lean meat, beans, peppers and broth go in cold and come out tender, and you didn't stand over anything.
Cooks on Pepper reach for this collection on Monday mornings, when the week is already full and they want something lighter than takeout waiting at six o'clock.
Every recipe here leans on chicken, turkey or trimmed beef and plenty of vegetables: Crockpot Taco Soup, Crockpot Turkey Chili with diced zucchini, Crock Pot Chicken Fajitas, Crock Pot Beef Stew, Crock Pot Stuffed Peppers, Chicken Enchilada Casserole, Slow Cooker Chicken Chimichangas and Crock Pot Tuscan Chicken.
Brown and drain the beef
Cook ground beef in a skillet 6 to 8 minutes, then drain well before it goes in the crock. It keeps soups and stuffed peppers from turning greasy.
Keep chicken breasts whole
Lay chicken breasts flat in one layer and cook on low 4 to 5 hours, then shred in the pot. Cubed chicken dries out long before the sauce is ready.
Add rice near the end
Stir uncooked rice into stuffed peppers or soup during the last 45 to 60 minutes so it stays separate instead of turning to paste.
Don't lift the lid
Every peek costs about 20 minutes of cooking time. Check once at the 4-hour mark and leave it alone otherwise.
