Open in Pepper →London broil is a lean, budget cut, and a few hours in soy sauce, oil, and lemon juice is what turns it into something you can slice thin and put on the table with pride.
Cooks on Pepper reach for these when the steak is thawing in the morning and dinner needs to be quick that evening, or when company is coming and the good steak isn't in the budget.
Every recipe here is built around that soak: Homemade Steak Marinade with olive oil, soy sauce, and fresh lemon juice, a London Broil with Liquid Smoke and Tony Chachere's, a garlic and Worcestershire London broil, and Marinated London Broil with Cilantro Gremolata.
Marinate at least 4 hours
London broil is lean and needs time. Give it 4 to 8 hours in the fridge, turning the bag once so both sides soak evenly.
Pat the steak dry
Blot the meat with paper towels before it hits the heat so it browns instead of steams.
Cook it hot and fast
Broil or grill about 5 to 7 minutes per side for medium-rare, then pull it before it goes gray in the middle.
Slice thin against the grain
Let it rest 10 minutes, find the direction of the muscle fibers, and cut across them in thin slices.
