Open in Pepper →A spoonful of ricotta in the batter changes everything. The pancakes come out soft in the middle, a little custardy, and the lemon keeps them from tasting heavy.
Cooks on Pepper reach for these on slow Saturday mornings, for birthday breakfasts, or any time they want something a step above the usual stack without much extra work.
Every recipe here is a version worth making: Blueberry Lemon Ricotta Pancakes, Lemon Ricotta Pancakes with Blueberry Sauce, Fluffy Ricotta Pancakes, and a couple of straightforward lemon ricotta stacks made with almond or all-purpose flour.
Drain the ricotta first
Set the ricotta in a fine strainer for 10 minutes if it looks watery. Too much liquid makes the batter loose and the pancakes gummy.
Zest before you juice
Grate the zest from the whole lemon first, then cut and squeeze it. You'll get about 1 tablespoon of zest and 2 to 3 tablespoons of juice.
Stop stirring early
Mix just until the flour disappears, about 10 strokes. Lumps are fine and keep the pancakes tender.
Cook them low and slow
Use medium-low heat and give each side 3 to 4 minutes. Ricotta batter browns fast on the outside before the center sets.
