Rest the batter
Let the mixed batter sit 10 minutes before the first pour. The flour hydrates and the pancakes come out taller and softer.
Stop stirring early
Mix just until the flour disappears, about 10 to 15 strokes. Lumps are fine; overmixing makes them tough and flat.
Scatter chips on top
Pour the batter first, then drop the chocolate chips onto the wet surface. They stay put instead of scorching on the griddle.
Cook on medium low
Hold the pan around 325°F and give each side 2 to 3 minutes. Flip when the edges look dry and bubbles stay open.
