Open in Pepper →Italian desserts run on a few simple things — ricotta, mascarpone, strong coffee, powdered sugar. Once you have those in the fridge, you can put something on the table that looks like it came from a bakery.
Cooks on Pepper reach for these when company is coming, when it's somebody's birthday, or when they want one good sweet thing at the end of a regular Sunday dinner.
Every recipe here is a real one, from Mini Cannoli Bites and Homemade Cannoli to Cannoli Dip you stir together in minutes, plus Lemon Tiramisu, Strawberry Tiramisu, Tiramisu Cupcakes, and an Italian Cannoli Pound Cake.
Drain the ricotta first
Set whole milk ricotta in a fine strainer over a bowl for at least 2 hours, or overnight, so your filling holds its shape instead of weeping.
Fill shells at the last minute
Pipe cannoli no more than 30 minutes before serving, or the shells soften and lose their snap.
Dip ladyfingers quickly
One second per side in cooled coffee is plenty — any longer and the layers turn to mush.
Chill tiramisu overnight
Give it at least 6 hours, ideally overnight, so the layers set and slice clean.
