Soften the ice cream first
Let a half gallon sit on the counter 10 to 15 minutes so it spreads without tearing the layer underneath.
Freeze between layers
Give each layer 30 to 60 minutes in the freezer before adding the next, or the syrup will sink straight through.
Line the pan
Overhang two sheets of plastic wrap or foil so you can lift the whole cake out in one piece.
Warm the knife
Dip your knife in hot water and wipe it dry between each cut for clean slices.
