Ingredients

  • 1 stick Butter
  • 3/4 cup Sugar
  • 1 tsp Vanilla
  • 1 Egg
  • 2 cups Flour
  • 2 tsp Baking powder
  • 1/4 tsp Salt
  • 3/4 cup Milk
  • 3 tbsp Softened butter
  • 1 tbsp Cinnamon
  • 1/2 cup Flour
  • 1/2 cup Brown sugar
  • 5 tbsp Softened butter
  • 3/4 cip Flour
  • 1/2 cup Brown sugar
  • 1 tbsp Cinnamon

Instructions

  1. 1Preheat the oven to 350°. In the bowl of a mixer, cream together the butter and sugar, scraping down the sides occasionally. Add the vanilla and egg, mix in. In a separate bowl, mix together the flour, baking powder and salt. Add one half of it to the mixer, and when mostly combined, add the milk. Once the milk is mostly incorporated, add the rest of the flour.
  2. 2* To make filling: in a small bowl, pinch together the softened butter, flour, sugar and cinnamon until soft crumbs form. * To make topping: add the butter, flour, brown sugar and cinnamon to a food processor and pulse until coarse crumbs form
  3. 3Pour in ½ of cake batter, and spread to all four corners. Sprinkle the filling over top, then pour in remaining cake batter, and spread carefully across the top.
  4. 4Bake for 45-50 minutes, until a toothpick inserted comes out clean. Cool to warm on wire rack before serving. Enjoy!!

The Cake That Tastes Like Sunday Morning

A honey bun cake is the kind of thing you can stir together while the coffee drips: cake batter in the pan, a cinnamon-sugar swirl through the middle, and a thin glaze poured over while it's still warm so it soaks in.

Cooks on Pepper reach for these when company is coming and there's no time to fuss, when the church breakfast needs something to slice, or when a Saturday just calls for something sweet on the counter.

Every recipe here is a swirled, glazed sheet cake — a well-loved Coffee Cake, a Cinnamon Roll Cake, a Cinnamon Coffee Cake made from scratch with flour and baking soda, and two Honey Bun Cakes built on a box of yellow cake mix with sour cream and oil.

Quick Tips

  1. 1

    Swirl, don't stir

Drop the cinnamon-sugar over half the batter, add the rest, then drag a knife through 3 or 4 times so you keep distinct ribbons.

  2. 2

    Glaze it warm

Pour the powdered sugar glaze over the cake within 5 to 10 minutes of taking it out so it sinks into the top instead of sitting on it.

  3. 3

    Use room temperature eggs

Set eggs and sour cream out 30 minutes ahead; cold ingredients make a lumpy batter that bakes unevenly.

  4. 4

    Check at 35 minutes

A 9x13 sheet cake is usually done between 35 and 40 minutes — a toothpick in the center should come out with just a few moist crumbs.
