Homemade Ranch Beats The Bottle Every Time

Ranch is the thing everybody in the house agrees on. A bowl of it turns raw carrots into a snack the kids actually eat, and it stretches a plate of chicken or a bag of chips into something people gather around.

Cooks on Pepper reach for these when company's coming over, when the cooler's packed for the lake, or when supper needs one more thing on the table and there's a block of cream cheese in the fridge.

Every recipe here is either a thick dip or a pourable dressing. Cheesy Ranch Dip and Boat Dip with Rotel are the party bowls, Cowboy Ranch Dressing and the Outback Steakhouse copycat go over salad and steak, and Homemade Ranch Seasoning means you can mix up a batch anytime.

Quick Tips

  1. 1

    Soften the cream cheese first

Leave it on the counter 30 to 45 minutes before mixing, or it will stay lumpy no matter how long you beat it.

  2. 2

    Chill it an hour

Ranch needs at least 60 minutes in the fridge for the onion and garlic powder to bloom and the herbs to soften.

  3. 3

    Drain the Rotel well

Press it in a strainer for a minute or two, otherwise the juice thins the dip into soup by hour two.

  4. 4

    Thin with buttermilk slowly

Add it a tablespoon at a time until it pours off the spoon; you can't take liquid back out once it's in.
