Open in Pepper →Fries are the side everybody actually eats. Whether they come out of the air fryer in fifteen minutes or out of hot oil in two batches, a hot salty fry makes a plain burger or a piece of chicken feel like supper somebody planned.
Cooks on Pepper reach for this collection on the nights dinner needs one more thing on the plate — or when the fries are the whole point and you're piling on cheese and sauce and calling it done.
Every recipe here is a fry worth making: Air Fried Sweet Potato Fries, Air Fryer Parmesan Truffle Fries, plain Air Fryer French Fries with garlic salt, Taco Bell Nacho Fries, Louisiana Voodoo Fries, Copycat Animal Style Fries, plus carrot fries with balsamic garlic aioli and air fried zucchini fries when you want something different.
Soak the cut potatoes
Cover cut russets with cold water for at least 30 minutes to pull out starch, then dry them well. Wet fries steam instead of crisping.
Fry them twice
Cook once at about 325°F until soft and pale, rest 10 minutes, then fry again at 375°F until deep golden.
Don't crowd the basket
Air fry in a single layer and shake the basket every 5 minutes so every side browns.
Salt them hot
Toss fries with salt within a minute of coming out of the oil or air fryer, while the surface is still hot enough to grab it.
