Soak the cut potatoes
Cover the cut fries in cold water for 30 minutes to rinse off surface starch, then drain and pat them completely dry before oiling.
Dry them bone dry
Wet potatoes steam instead of crisping. Blot with a clean towel for a full minute until no water shows.
Give them room
Cook in a single layer with space between pieces, working in 2 batches if you have to, and shake the basket halfway through.
Salt them hot
Toss with salt the second they come out, while the surface oil is still hot, so it sticks instead of falling to the pan.
