Open in Pepper →Thighs forgive you. They hold their juice through a hot oven or a busy evening, and they soak up lemon, garlic, and mustard better than any other cut, so a short list of pantry seasonings turns into real dinner.
Cooks on Pepper reach for this collection on the nights when they want something lighter than fried chicken but still filling — a sheet pan in the oven, an air fryer basket going, and vegetables roasting alongside.
Every recipe here is built around that cut: Air Fryer Lemon Pepper Chicken Thighs, Mediterranean Chicken Thigh Roast with Greek yogurt and bell peppers, Asian Glazed Chicken Thighs with low-sodium coconut aminos, Sticky Cilantro Lime Chicken Thighs, and Greek Lemon Herb Chicken Thighs with Roasted Vegetables.
Pat the thighs dry
Blot each thigh with paper towels before seasoning so the skin crisps instead of steams. Two minutes here makes a real difference in the air fryer.
Cook to 175 degrees
Thighs are best at 175 to 180°F in the thickest part, higher than breast meat. The connective tissue softens and the meat stays juicy.
Add sugar glazes late
Brush on brown sugar Dijon or a coconut aminos glaze during the last 5 to 8 minutes so it sticks instead of scorching.
Give them room
Leave about an inch between thighs on the pan or in the basket. Crowded chicken steams and never browns.
