Soften the cream cheese
Let an 8 oz block sit out 30 to 45 minutes before mixing, or it will stay lumpy no matter how long you beat it.
Beat before you fold
Whip the cream cheese smooth for 2 minutes first, then fold in the marshmallow fluff or Cool Whip by hand so it stays light.
Chill an hour first
An hour in the fridge lets the vanilla and brown sugar settle in and thickens the dip enough to cling to apple slices.
Keep sliced fruit bright
Toss apple or banana slices with 1 tablespoon of lemon or pineapple juice so they don't brown on the platter.
