Marinate at least 4 hours
Soy sauce, olive oil, and brown sugar need 4 to 8 hours to work into the meat. Overnight is fine, but pull it out 30 minutes before cooking so it isn't ice cold.
Get the pan screaming hot
Flank steak wants high heat and about 4 to 5 minutes per side for medium-rare. Any longer and it turns tough.
Rest before you slice
Let the steak sit 10 minutes under loose foil so the juices stay in the meat instead of running out on the board.
Slice against the grain
Find the long muscle fibers and cut across them at an angle, no thicker than a quarter inch, for tender bites every time.
