Save your pasta water
Scoop out a cup before draining. A few splashes loosen up baked feta or Boursin sauce and help it cling to the noodles.
Roast the tomatoes hard
Give cherry or grape tomatoes 35 to 40 minutes at 400°F until they burst and go jammy — that's where the sauce comes from.
Undercook the noodles slightly
Pull pasta 1 to 2 minutes shy of the box time so it finishes in the hot sauce instead of turning mushy.
Spread chips in one layer
For pasta chips, keep pieces from touching and bake 10 to 12 minutes, flipping once, so they crisp instead of steam.
