Grate your own carrots
Pre-shredded bags are dry and thick. Use the small holes on a box grater for about 3 cups of fine shreds that melt into the batter.
Cool before frosting
Let layers sit at least 1 hour until fully cool, or cream cheese frosting will slide right off the sides.
Soak the coconut cake
Poke holes in the warm cake with a fork and pour cream of coconut and sweetened condensed milk over it while it's still hot so it soaks in.
Fill cupcakes two-thirds
Scoop about 1/4 cup of batter per liner so they dome instead of spilling over, and bake 18 to 22 minutes.
