Open in Pepper →Some nights you have an hour and some nights you have twenty minutes, and dinner still has to happen. These are the meals that come together on one pan or in one pot, with meat, potatoes, and something green all cooking at the same time.
Cooks on Pepper reach for this collection on the nights when practice runs late, the fridge is half empty, and nobody wants to hear the word leftovers again.
Every recipe here is a real dinner: Easy Veggies and Sausage dinner with potatoes and bell peppers, Garlic Parmesan Sheet Pan Dinner with chicken and asparagus, Steak Sheet Pan Dinner, One Pot Chicken Pot Pie Orzo Dinner, Salisbury Steaks that taste nothing like the TV dinners, and Dinner rolls to go alongside.
Cut potatoes small
Halve baby golds or cut potatoes into 1-inch pieces so they finish in the same 25 to 30 minutes as the chicken or sausage.
Add asparagus late
Asparagus only needs about 10 minutes at 425°F, so slide it onto the sheet pan partway through instead of at the start.
Give the pan room
Spread everything in one layer with a little space between pieces; crowded pans steam instead of browning. Use two sheet pans if you need to.
Rest the steak
Let ribeye or chuck steak sit 5 minutes after cooking before slicing so the juices stay in the meat and not on the cutting board.
